The Color panel expects an aggregation, so it's not possible to use a text field for it. A simple workaround is to map the text values to numeric codes in the data model and then apply either the MIN, MAX, or AVG functions on that field in the widget.
You will be able to achieve this by assigning an integer per each store brand, use that int in the color panel and like TriAnthony writes above, use MIN, MAX, or AVG functions on that field in the widget. You can then use a script to modify the legend's and map the INTs to text values of each store.
